Witches in the middle ages were herbalists, and actually helped people heal. They were systematically killed so that doctors would not have any competition (especially since the "witches" were better healers). The book is "Witches, Midwives and Nurses: A History of Women Healers"

I don’t think people have the guts to take such revenge nowadays. Everything is sanitized- how we get our meat, how the dead are prepared for burial. We are insulated from grim reality. Maybe that isn’t such a good thing. It took them 500 years to try this again. I am certain they do not think they will suffer any consequences, even if caught.
